Stay in Hornfleur ( supposed to be a nice town )  for 1 night Beautiful town
Drive to Bayeux stay 1 or two nights  Another beautiful town with the tapestry
Drive to Quimper on the coast for 2 or 3 nights by the sea  This is about a 4 hour drive but never been myself.
Drive to Dinan/St malo ( supposed to be a nice towns )  1 or two nights  St Malo is lovely.  I will try and find the restaurant we went to.
Ferry to Jersey Stay 2 nights  Love Jersey.  If you like seafood try the Crabshack chain but go at lunchtime as they can run out of crab by the evening!  Definitely book a table.
    Ferry to Poole
Stay in Lyme Regis for 1 or two nights  Two of my friends adore Bridport which is on the drive from Poole to Lyme Regis so might be worth checking out.
    then back to cheshire
    Have a fantastic time.

I don't know Jersey but all your French itinerary sounds amazing. I've been to all those places and they're well worth a visit. I don't know what interests you but do check out the calvaries in Brittany. You could possibly see Mont St Michel when you're around there area.

Another vote for Mont St Michel: it remains a vivid memory from my early childhood.

I think that visiting Jersey will increase your total costs significantly, but it may well be worth it to you.
