    Hi financially_gaga,

Now that you've had some replies I'll add your thread to the main shortbread thread as it helps to keep the recipes and advice together.

    Good luck with making yours.

  • Don't buy your shortbread anymore - make it. I always thought it was difficult but it's not. It's cheap, quick, easy, and so much nicer than shop bought. Really nice winter warmer with a cuppa looking out at the snow.

    Heat oven to 190

    180g plain flour
    55g sugar
125g butter (cut it into cubes from fridge)

Whizz in blender until like breadcrumbs that start to bind. Don't overwork it.

Press into non-stick paper lined tray (about 6 inches square).

    Sprinkle with sugar.

Bake for 15-20 mins depending on your oven.

Cut into fingers while hot. As it cools it becomes brittle. Lovely to eat while still hot/warm.

    Yum. Enjoy. Cheer yourselves up.

fab - actually just jumped on here to see if there was a recipe! Got some condensed milk caramel type stuff in the store cupboard and some cheap chocolate - millionaires shortbread here I come!
  • Hmmm Little Vics. You mentioning condensed milk made me think about rice pudding.

    Oven at 180

    9 heaped dtsp sugar
    12 heaped dtsp pudding rice
    1 large tin evaporated milk
    2 pints water
    Knob of butter
    Grated nutmeg

Warm on hob and pop in oven for about 2 hours with a lid.

Check every 45 mins or so and stir. Taste to ensure rice soft.

Add more water if it gets a bit thick.

    I need to diet........ Lol.

    Enjoy x
