Thanks Penny. I didn't have much butter left, so added the last of it to one batch of the mix. I've added a couple of tablespoons of Elmea single cream to the rest of it - they're in the oven now so will update when they're cool enough to eat.some people grin and bear it, others smile and do it0

Hi,
I'm making Rosemary and Walnut Shortbread as part of Foodie gifts and am concerned they won't keep till the recipient eats them, usually recipes state they should be kept in an airtight tin. As a present thats not going to be the case so will they be ok?
Thanks for any advice.DMP Support Thread Member 238DMP started October 20080 -

Hi All, trying to not buy biscuits/cakes etc for the kids and making them at home ... however I can not seem to make shortbread
Twice I have made it and each time it has flattened and gone soggy.
Using 8oz butter, 8oz plain flour, 2.5oz caster sugar. Rubbing together until it forms ball. Rolling out, cutting into pieces and putting in fridge 30minutes. Baking for 10mins at 180oC
Has anyone got any suggestions? Do you normally bake yours traybake stylee! or cut into fingers?
I am really frustrated as I am normally a really good cook!
Thanks for your help x0 -
