    Good timing, given the weather! used to make shortbread but haven't done so for years. Think I'll give it a go!

    mine's in the oven now - found my grandma's recipe so have used that - 8oz marge, 8oz plain flour, 4oz cornflour, 4oz icing sugar - mix, bake for 45 mins at gm 4. Will let you know how it turns out!

    My mum in law puts semolina in her shortbread and it's lovely. It always turns out a bit heavy when I use her recipe though.

    Hello all - As mentioned on another thread, I'm making jams and shortbreads this year to put in Christmas hampers. Another MSE-er asked for the recipe and thought would share.
    It's a Women's Institute recipe and it's melt in the mouth!

    225g (8oz) softened butter
    115g (4oz) icing sugar
    225g (8oz) plain flour (although all I had was self raising and this worked great too)
    115g (4oz) cornflour
    caster sugar to dredge

    Cream butter and sugar, then blend in flour and cornflour. Grease a swiss roll tin and press mixture in firmly. Bake at 150 degrees c (fan oven) for 40-50 mins until golden in colour. Leave to cool in the tray for 10 mins and dredge with caster sugar. Cut into fingers and put on wire rack to cool totally.

    Another point, in my opinion butter has to be used for shortbread, I tried with with margarine and it wasn't the same at all.

    I've just made some (before I found this thread - oddly enough!) and I put in about 2oz Ground Almonds (6oz flour, 4oz butter etc) I had left over from Xmas.

    Very yummy!

    ooo lovely DS and I are going to make some shortbread tomorrow. We made homemade rice pud last week and he put a ton of nutmeg on top of it and it was REALLY tasty :)

    We love homemade shortbread here. I only use butter though. Tried margarine just the once, and it didn't even come close to the all-butter one. I use the Be-Ro recipe on their website. 9oz flour, 6oz butter, and 3oz sugar. I wouldn't say it works out cheap, due to the amount of butter needed. But, I'ts absolutely delicious :D
  • You can get a 500g block of proper butter from Waitrose for 1.65 which is a pretty good price. Some supermarkets sell an own brand but when you read the ingredients it includes buttermilk amongst other things you don't expect to be there.

    Don't buy your shortbread anymore - make it. I always thought it was difficult but it's not. It's cheap, quick, easy, and so much nicer than shop bought. Really nice winter warmer with a cuppa looking out at the snow.

    Heat oven to 190

    180g plain flour
    55g sugar
    125g butter (cut it into cubes from fridge)

    Whizz in blender until like breadcrumbs that start to bind. Don't overwork it.

    Press into non-stick paper lined tray (about 6 inches square).

    Sprinkle with sugar.

    Bake for 15-20 mins depending on your oven.

    Cut into fingers while hot. As it cools it becomes brittle. Lovely to eat while still hot/warm.

    Yum. Enjoy. Cheer yourselves up.
