Freezing bread dough

For the last few weeks I've been making the effort & making my own bread (in MR Fastbake breadmaker!!) & have now progressed to rolls & pizza bases.
I've noticed on OS that people mention freezing pizza bases for later.
Would it be OK to make dough for bread rolls when I have plenty of time & freeze it for use on another day when I'm busy & rushing in & out?
If so at what stage should it be frozen & what's the best way to store it & defrost it?:j New Year, New You = 1.5lb/12lb:j0 -
I have tried freezing bread dough in various quantities, but have decided never to do it again. I don't have a breadmaker, but making by hand you freeze at the end of the first rise, having punched it down in size and shaped it. It takes forever and a day to thaw out and re-activate, so forget it for days when you are rushed - it just isn't going to help. I prefer to use traditional dried yeast and rise twice, but the quick acting yeast is easy to use for rush jobs, so I keep some of that on hand too. I think that is probably what you use in your breadmaker.0

How about half bake then freeze them?0

Fully bake rolls then freeze. Once defrosted stick in the oven for 5 mins and they smell like they were newly baked and are scrummy!DFW Nerd #025DFW no more! Officially debt free 2017 - now joining the MFW's!

Please tell me how I would do this or whether there is another way. Im planning to cook the following:
naan bread
pitta bread
pizza bases
bread rolls
If I cook the pizza surely when I add the topping it will overcook and burn on the edges?
Do you generally advise I properly cook bread and then heat through or is there a way of freezing part way through the process?0 -

I freeze dough all the time by portioning it up and putting it into a freezer bag. What I normally do then is either defrost it overnight in the fridge or leave it out on the side to warm up again. It might take a while to come back to life, but it'll be absolutely fine.0

That has put me out of my misery too..... when i think about it, i should have known the answer... as i freeze fresh yeast, and it "works" afterwards :wall: ... what a dipstick :rotfl:-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50
