as far as I know, the supermarkets send frozen dough to the stores where it's then baked- there was a bit of a hoo har a while ago wasn't there about them claiming bread was feshly baked in store when in fact all that was happening was the frozen dough was being bunged in the oven? so, the answer is yes0

Can I free bread/pizza dough without killing the yeast? And if so how do I defrost it whilst I'm out at work etc.Tim0

You can freeze dough :j To defrost you can put into a covered bowl and it'll thaw, come to room temp, and prove for when you get hoem.

Is it possible to freeze bread dough and if so at what stage? I find that my bradmaker makes nice dough and when baked in the oven my lot love it (especially fresh from the oven) but because I work I can only do this on my day off.

I freeze dough all of the time - and in fact most of the 'fresh' bread you buy in supermarkets is made from frozen dough
What I normally do is give it one rise then divide it up and freeze it in bags. Then when I need it I generally let it defrost slowly in the fridge or somewhere cool, then shape it, let it double then bake. If it's pizza dough I normally just let it defrost, roll it out and bake it, without the extra rise.
You can freeze it partially cooked but this isn't something I've really done much, but a google search might give you more info on that. I tend to freeze the dough as dough simply because you can squish it in the freezer and it takes less space up0 -

I have started to make bread rolls using dough made in my BM. It is making too many for me to eat on the day they are made. Can I freeze some of the dough mix or just keep it in the fridge. I would use it all within 24/48 hours but not sure if I need to bake it once it is mixed. I prefer not to freeze the rolls as I like them just baked.0
