I would thank them for the invitation to interview me and say that I am very interested in the role but that I am out of the country between x and y dates and so unfortunately cannot attend on the date they have offered. Could they please consider offering an alternative date and that I am very happy to come before my holiday or on a date afterwards if that is more convenient for them.

Thanks depends how keen they are. Is at a college I think they usually interview on one day then offer the job next day. The proposed date is in 12 days time

If you don't ask, you won't get an alternative time/date.

If they'll only offer a single interview date that's ok, you then have to choose whether to break your holiday or decline the interview.

I think you have to simply ask politely and see what the response is.

If they are like the local college near me, the jobs are advertised and interview date stated in the advert.  In such a case, the college may have expected any applicant unable to make the interview date to advise with application.

You're making rather a meal of this. You've confirmed you are out of the country and aren't willing to break your holiday (which is fair enough), so asking them if another date is possible is the only logical next step.

Try the above wording - but I leave out the fact you're on holiday! Simply being 'unavoidably out of the country' will do the trick.
Googling on your question might have been both quicker and easier, if you're only after simple facts rather than opinions!

I'd rather tell them it's a holiday, as holiday are planned. 'unavoidably out of the country" might lead to wonder if that happens a lot.

I'm not able to make the proposed interview date of xyz due to a prearranged holiday overseas.

I am available all day on xyz and xyz if these dates suit? Otherwise I'm more than happy to attend the interview remotely and conduct my presentation via Teams/Zoom.

Forty and fabulous, well that's what my cards say....

I was thinking I'm unavailable that date as I'm on holiday abroad that week. I'm not sure if there would be any flexibility in the date? If not I'm happy to possibly speak in the future.
