I think that's great, They are on notice that the address is not good for service so that scuppers them for a month or more, then you can hit them in February with a non-UK permanent address and maybe something to evidence your status abroad (work or study contract?). The two I had were info@parkingeye.co.uk and enforcement@parkingeye.co.uk. Seems they do not have a Data Protection Officer (thought they had to have one, maybe a complaint to ICO) and you have to send them a letter - how quaint and old-fashioned!2

My only worry is if they issue the claim and ignore my address change, I will need to travel back to defend this, tho I presume I can put the flights cost into my claim against them

If they issue a Claim, then during the process any hearing will be assigned to a court of the Defendant's choice.1
