Oh - how sad about the rhubarb cakes, but glad you could rescue it for a topping.  We have some rhubarb to cook up so I forsee an apple rhubarb crumble in our futures.

So pleased to hear that your DH is on the mend - nothing like being away and hearing medical news, but so good that you are back home and in your own environment while he makes the adjustments.

Hope your full on course day is a lovely experience and that you have some rest time planned in to counteract it!

As far as I am concerned rhubarb crumble is definitely not the way.  It has to be rhubarb batter pudding.  Think yorkshire pudding with ginger & rhubarb.  There is an apple version & a bacon version etc.

@badmemory - that did make me laugh - I'd have absolutely no clue how to make a batter pudding! I'm wondering if it's related to a peach cobbler, which is fresh or tinned fruit cooked in a sweet batter and always in a metal tray.  I must agree though, ginger does taste fabulous with rhubarb.

I call mine a crumble but have just looked at the recipe and it's actually called an apple/rhubarb oat & polenta crisp and also has candied ginger in it!  OH just piped up and said 'that dessert you make is really nice, but it's definitely not a crumble!'

It is out of a very old version of Good Housekeeping recipe book about 1966.  It is just yorkshire pudding, butter, sugar, ground ginger & rhubarb.  Well before the don't use butter it is bad for you time.

It's not in my (1950s!) Good Housekeeping but I'm intrigued! It is similar to this? Rhubarb Pudding - so quick & easy! | Fab Food 4 All

Thank you, and a timely reminder to rest. :)

The course was excellent, I'm so glad I have stayed with it, though I don't feel I do it justice. Some of us were discussing certain books which has just led to me having a search through the bookcases and finding one to read and one to lend. I actually finished the notebook I was using and ran a pen out, so I was glad I'd thought ahead and had spares! The breakfast and lunch provided were nice, too.

DH went to the car boot and the art auction this morning (didn't buy anything) and met up with the rest of the family at Sutton Bank for the afternoon. J has sent lovely photos of the whole group taken by some kind passer by, so I get a flavour of the day, and A says they had deer run across in front of them on the way home.

I was restrained and didn't buy a new notebook. I was tempted, but it has to be the right one and when I thought about it, this course is interactive and something I need to review after the event, so I might try putting notes online so I can edit and mark up developments of thoughts and so on. I rarely use 'track changes' but that might be a way of doing it, or any other ideas are welcome. I want to be able to give evidence of actions and furthering understanding.

And... a whole five minutes in the garden today! But that's something. And fish and chips for tea.

It does look very similar to that, but no vanilla, that is obviously a later addition.

Thanks - yummy! I still have some rhubarb to use up and for some reason won't be making the crumble recipe again but this could be really nice. I also have lactose free milk and some eggs wanting a use so I could make a DH-friendly version. :)
