I worked in IT at one of the big Scottish banks for much of the time between 1993 and 2008. When I first started we had to code separate processing for bank holidays that applied only to Scottish sortcodes or English/Welsh sortcodes. I can't remember exactly when it happened (probably late 90s) but by the time I left that had been scrapped and processing for all sortcodes was standardised on English/Welsh bank holiday dates. After the change a few Scottish branches still closed on some Scottish holidays (particularly 2nd January) and more opened for limited hours with reduced staff numbers, but whether either of those happens these days I've no idea.
