Considering court action over flight delay - advice needed

Hi there, a flight I was on from Gatwick to Dublin in June 2022 arrived over 3 hours late to the destination, and I attempted to pursue compensation. Aer Lingus claimed the delay was legal due to "unforeseen circumstances" despite the fact that staff on the ground and on the plane gave about 3 conflicting reasons for the delay, none of which legally count as unforeseen circumstances. So I used Resolver and after several months CAA passenger advice said they believed my claim was valid and said they would contact Aer Lingus on my behalf. 

Today I received word from CAA that Aer Lingus never replied to any of their correspondence and have not proved that the delay was for a genuine reason and they believe I am entitled to compensation. However they have advised I take legal action. Has anyone ever done this and if so would you recommend it or have any advice? And would it alternatively be worth my while to go back to Aer Lingus stating that CAA believe I'm entitled to compensation to see if I could receive it instead of going down legal route?

    Main consideration is what evidence you can present to show the delay was caused by something within their control.

    Travel insurers can often be a viable route for out of pocket costs incurred that aren't recoverable from an airline, but are you aware of any who would step in to make a compensation payment due from an airline, or even one who'd pay out for a delay of 'over three hours' (assuming not much over)?
