I just want to pay extra for one 23kg suitcase

I want to book tickets for 2 people and save as much as possible.
It seems universal that the operators offer a no frills price where you can't select seats and take a large suitcase. They give you an upgrade option to do both.
However, I don't want to pay to choose a seat but I want to pay for just ONE person to take a large suitcase. They don't give you this option on their webpage so it would seem at this stage I have pay an extra £240 for that suitcase!

I'm trying to understand if I can simple go for the cheapest option and pay extra for that one large suitcase. Hopefully it would be much cheaper than £240.
The problem is I can't find anywhere if I can and how much. I think once I've booked I can't change any options so I need to be sure.
Does anyone know or have experience with this?

I've booked Ryanair numerous times for two people and been able to add on one checked back between us each way, so it's certainly not universal.0

Extra bags can be added at the check-in stage. From Caz's link Delta website says €60 for LON-PSP.1

Choose the cheaper option and then add more bags at check in stage. Its £65.

Yes, you book the one without seat or luggage and then afterwards can pay to upgrade to include a single bag for one traveller0

So it seems I have to pay an extra £130 in total to just add a 23kg suitcase.
An extra £110 on top of that will allow 2 x 23kg suitcases instead plus being able to choose our own seats and eligible for any upgrades.
Looks like I'll just have to bite the pillow and just pay the extra £240. I can't go without at least one 23kg suitcase.
Any recommendations or tips on getting any free upgrades?

Best to book before - I recently flew to Ibiza thinking that my carry on bag was the right size, turns out it was not and I had to pay £50 at the gate. Flew with EasyJet0
