Currently with Plusnet mobile so have to move sooner or later. EE seems to expensive to me. I have checked for coverage on Ofcom and Signal Checker but they are vastly different. I have also checked on individual providers and again they don't match Ofcom so who do I believe?

Some suggest getting a free PAYG sim to try in your phone to see which provider gives the better signal

As above, you need to try all the networks out to see what works for you.
Signal checkers aren't actually based on measurements but on estimates and map surveys and so are only a computer plot of the best guess at what sort or service you may receive.
They can't and don't take into account any anomalies that may have arisen since the original estimate, like extra building, bigger trees or even tower cranes which may have spung up between you and the mast that serves you.Never under estimate the power of stupid people in large numbers0 -
Just to point out that OpenSignal is based on actual measurements by participants. But there may be few in your area.

Some signal checkers may be out of date as networks are decommissioning older frequencies and using new bands. And to cap that piggyback and budget providers may not have full access to all the carrier bands. Don't commit to a long term contract without checking. To play safe lyca, rwg, and 1pmobile use the ee signal like plusnet (1pmobile actually use the full range of ee frequencies) so if you had a good signal on plusnet you should be fine with these.1
