Had a 4+ hour delay on a UK domestic Ryanair flight.  Claimed.  Denied: "weather/knock on delay"

Took it to AviationADR.  I got my compensation (£220/passenger)

I had a flight cancelled by British Airways to Marseille. It was cancelled due to bad weather expected later in the day. I didn't think this was a valid excuse so, when BA denied my claim I took it to CEDR. CEDR denied my claim so I took it to Bott & co. Bott and Co just got the case settled (for 5 pax). They took more than half the compensation as their fee. I don't begrudge them this. I do begrudge BA and CEDRs failure to properly acknowledge the valid claim. Thank you Bott and co!

If the flight was cancelled then the airline will refund. You need to request the refund with whoever you booked the flights with. (if booked with a third party the refund will initially go to them and they may deduct a service fee depending on what is in their t&cs)

If Emirates advised you that they were cancelling your flights then (if departing from the UK or EU) they're obliged to offer you the choice between a refund or a rebooking at their expense. A travel insurer will know this and so wouldn't reimburse costs that are recoverable from another party.

However, if you've already paid for alternative flights then you'd be entitled to claim the refund from Emirates, assuming here that you're referring to flights that they cancelled the flights themselves rather than you choosing not to fly with them.
