Where can I get a PAYG sim on the O2 network ( the only one that works where I live ) for my back up work phone that doesn't steal all my credit after a month ?

O2 classic pay as you go sims are still being sold on ebay but are not available through o2 now, or there is giffgaff.
Current o2 sim offers have a tendency to assume you wish to buy a 'rocket pack' rather than straight topups, which I presume is what you mean.
Tesco also run on o2 and offer 'triple credit' where your topup is tripled for a month then two thirds of it evaporates if not used at the end of the month. Tesco Lite tariff could be a good option but again they assume you want triple credit (even with the credit tripled lite is still cheaper for calls).
You need to register a sim and then switch to the tariff (best do that before topping up/buying anything.)

I need a SIM as a backup that will just have credit on it when I need it, 1p mobile worked for that but I'm now out of their coverage zone.0
