I'm going to do my first ever port, and so don't know what preparations I will have to do.
Do the three main apps (Contacts, Messages, and Phone) have data on the SIM?

If so, what do I need to do in order to keep the information?
I can see that Contacts has an Export option, but what about the other two apps?

Nothing will be stored on the SIM. Unless you've specifically told the phone otherwise everything is stored in your Google account.

Swapping SIM cards will have no effect on the apps and contacts list etc already stored on your handset.

    Get your PAC code.
Give it to your new provider alongside your new temporary number.
Wait until c. 11am the next working day after you submit it.
    Swap your SIM.

    That is all.

    You need do nothing else.

Have you tested your new network for signal strength/services? Are you happy that it does what you need?
Depending on who you are porting to your port could take 48 hours to start (especially if it is to a smaller piggyback network.) Once your port starts your old sim will lose signal, you cab then swap over to your new sim and calls and texts to your current number should start to be routed to your new sim.

When I bought the phone, 2-3 years ago, I didn't need to open a Google account to use the phone.
I had previously opened a gmail account, hardly ever used, so is my phone data being stored on the gmail account?

I have now sent off for the sim from 1pMobile.
From your previous advice, I was going to check that it could receive phone calls and texts, and then contact 1pMobile so they could switch to my old number.

Gmail is a Google account. So unless you've turned anything off it will be synced.

The phone does need to be logged in to your Google account for the Contacts/Phone data to be synced with/stored in the Google cloud. Don't think SMS messages are saved.

If not sure then go to Settings/Accounts and see if it's shown.

Regardless, the data will be stored in the phone's internal RAM not the SIM.
