    That actually sounds really nice! like something that King Henry wouldve eaten!!! mulled wine contains spices so check the label and see if you can identify the spices and/or herbs which have been added. whether it will prob be sweet or savoury and you can add herbs to correct any imbalance. you may like to add either rosemary or oregano if you think it may be too sweet. and make a quite dry casserole and serve with couscous. or make loads of sauce and serve with rice.
    A dash of worcester sauce may help if the final result is a bit sweet (or a couple of shakes of vinegar). either way I would cook it quite slowly and I really think that the end result may be outstanding!
    Going off now to see if that bottle of mulled wine I was given last year is still in cupboard!!!

    It does sound quite nice. That is something I'd try - long slow cooking with spiced fruity wine, some mushrooms and shallots or red onions. I think that'd make a tasty stew or pie filling. I think it would work well with venison, too (reaaaaally pushing the boat out there though!)

  • Thank you so much. I've gone from being worried it was a bit of a daft idea to being in a hurry to try it out! The bottle says "flavoured with cinnamon, cloves and nutmeg this subtly aromatic wine is laden with sweet fruit..." So your suggestions on counteracting the sweetness make sense - I wouldn't have had a clue how to go about that though, without your help.

    happychicken - I found that bottle of mulled wine and I have some stewing beef in freezer - so guess whats for supper tomorow!
    DO let us know what it turned out like!
    cinnamon cloves and nutmeg eh, must be same as the one Ive got. I plan to brown some onions, carrots and celery in frying pan then remove them and brown the beef. deglaze with some of the wine then put in casserole. add the veg and the rest of the wine then I think I will add a bay leaf (or two) some dried mixed herbs and then just leave them in a low oven for about 2 or 3 hours!
    maybe a shake of worcerster sauce. will taste halfway and see if it needs it.

  • Meritaten, the gratitude is all mine as I think I shall be copying you to the letter! I think I might bring my slow cooker back into service for this one! I've got some celery threatening to turn sulky and will put some mushrooms on my list as I do like them with beef.

    I did a mulled wine lamb in the slow cooker and it was lovely. It really had a good flavour. I just used it instead of a bottle of red! Enjoy :)

  • Hi everyone me and the Hubby are not big drinkers but someone gave us a mulled wine set for x mass last year still in date we felt we should use it so we have made it had a glass and dont want to drink anymore so I am wondering what can I do/Clean with a load of mulled wine. Any ideas?
