OP can send a letter before action but we've explained why it is best to wait till the amount owed is finalised before starting a court claim2

(no offence..) sadly such risks can and should be forseen and planned/budgeted for by landlords and their advisers. Bin there, "enjoyed" them ... plus non-paying tenants boasting to their chums about how much they were making subletting two bedrooms....1

Even if the OP doesn’t get their money back.
This is the risk you accept when you become a landlord. No point crying over it now, and it's unlikely that the OP will get any money back. The tenant isn't going to give them their new address to send the claim to.2
