Car hire claiming procedure

I hired a car in Italy for two weeks via Jet2. I took out extra insurance via Eversure and holiday insurance via Coverwise.
After 50 miles I got a flat which when I checked I realised was a previous puncture that had been repaired by the now empty puncture repair kit in the boot.
After about two hours of trying to get hold of someone, they picked us up, demanded the tow fee upfront and dropped me off at the garage. The garage could not get hold of the hire company. They noted that another tyre was unsafe and needed replacing as well. To cut a long story short, all this only got resolved after about 5 days.
Can anyone point me to a guide or some help anywhere where I can start to try and put in a claim? I'm not sure if I need to be going via the car company or straight to the Eversure.
