The other side of the coin however - it seems like Jet2 decided to at least fly a plane load of customers out to Zante without a long delay so that they could get away on holiday - pick up the extra cost of overnighting crew and an aircraft down route - flying the ZTH MAN customers back asap the next day (once crew rested and airport open) rather than only departing MAN for ZTH the next day.

I can understand your daughter’s upset and no suggestion from me that this (as you mention) is your daughter’s problem, but I don’t think it is a clear cut situation as you perhaps believe.

Not really clear still. I think you mean 

- the physical plane that your flight planned to subsequently use arrived 1h04m late -> that's irrelevant. 
- your flight using another plane departed 7 hours late -> that's irrelevant. 
- your flight arrived at your final destination of Manchester 7 hours late -> thats the only bit that IS relevant. 

Don't mention the first two timings, as it'll only confuse things. You are claiming for a 7 hour delay in arrival of your flight. The cause as  far as you know was technical difficulties and a change in plane being used, ie within their control. However don't get into the timings of those points.
