Easyjet UK delay 3+hours, landed just under 3 Hours

after some advice please.
following a recent EasyJet flight from Liverpool > Palma (Majorca) on Sunday 7th May 2023. (EZY3375)
Are scheduled departure was 19:40.
I was checking the flight schedule from early afternoon, it appeared to show as several short flights between Liverpool & Belfast also the Isle of Man before a later flight to Majorca at 19:40.
then not long before we set off for Liverpool airport we got an auto message from EasyJet stating our flight was delayed for just under 2 hours*
so I checked on Flight Radar 24 again, now it was showing with an extra flight in the days schedule to Paris and back ?
is this where the delay comes from by adding the extra flight ?
anyway by the time we arrived at JLA, I had 3 different departure times via Liverpool airport LED screens, EasyJet Live updates and Flight Radar.
we had NO communication from EasyJet whilst in the airport, bearing in mind the delay soon went over 2 hours.
at one point we were advised to go the to the gate, only to be advised of a further delay.
we finally boarded the plane, only to be advised of a further delay with the refuelling of the aircraft.
I have a screenshot via FlightRadar 24 stating departure time of 23:08 (Flight No.UZ3375)
However we landed at Palma at 02:05, although that was landing not at the gate which would of took another few minutes.
could someone please advise on were I stand here.
we left well over 3 hours late, the captain did say it was a technical issue with another EasyJet parked up next to ours when we left, how true this is ?
we landed a few minutes short of 3 hours, although we then had to get to the gate before the doors got opened.
the delay time kept getting pushed further and further back, via 3 different options.
any advice would be apricated.

Flightaware shows the flight departed 3 hours and 21 minutes late, it shows that it landed at 02:05am and got to gate at 02:07am (v's gate arrival time of 11:10pm) so logged as 2 hours and 57 minutes late
Compensation is measured on doors open on arrival so you would need believe that it took more than 3 minutes after arriving on stand before the doors were opened.1 -
By the looks of it the flight is over 1,500km and so for compensation you must be delayed more than 3 hours in your arrival (not departure)
Unfortunately the tool I use only goes back a few days, 9th May is the earliest I can query, to look up what the official arrival time was logged at. You can pay for historic data but I dont.1 -

the times you quote make a lot of sense, from the various updates I was getting.
how I would prove the length of time of took for the doors to actually open is a tuff one, more so when we were sat at the rear of the plane.
is there nothing about the 3+ hours delay in the first place the is covered under the delay compensation.0 -
