Suggestions for summer holiday with 6mo baby

We drove to Brittany, via a ferry, and stayed in a lovely site. You rented self-catering gites but the owners ran a bar in the evening and had a small soft play and garden toys. It was lovely site-seeing in France or wandering around a French Market, and then socialising with other families in the evening sun while the children played, enjoying a beer and a kir royale. There was also a heated pool kept behind child-safe gates. Perfect.Don't listen to me, I'm no expert!1

Just don't let them crawl round the floor unhindered as the waiters prefer not to navigate live trip hazards.
Be reasonable about evenings, keep to the same routine for the baby, adjust your supper time and choose recipes so they can cope with delays or bringing forward. When you've got ripe figs in the garden and good fish and moules in the local shops, you can throw things together quickly.
