    Do I need to prove that I was in full time employment with a company by showing payslips/p60 or just state it as fact? 

    My vehicle was owned by them for insurance purposes (v5 in my name/address to cover speeding fines etc)

    When I send as email to the court and claimant do I need to do it during business hours to get acknowledgement of receipt or at anytime?

    It shouldn't really matter. Not all courts/claimants/solicitors will have an auto-response unlike the CCBC. However, if you are sending an email that you want to be able to evidence as having been sent, you should also CC in yourself. If you receive it and there is no bounce from the other addresses, you can be reasonably sure that has been received.

    What the above doesn't evidence is whether it was read. However, if they should ever try to say that they never "received" it, you can evidence the headers of your sent and received copy to show otherwise.

    Anyone with enough technical savvy can set up in their own email system, especially if they use their own domain name, an option to report whether an email that was sent has been opened or clicked on. I use MailJet.

    This is the kind of report I get and I can then go in and see exactly which email was opened, clicked, bounced or whatever.
