Do we need do anything else? We did not end up appealing via UKPC (letter was dated 24/03/23) - so I just wanted to be sure that the manager's word (which we have on email) is enough for us to assume that this is the end of the issue.
Just appeal online to UKPC stating that the retail manager has cancelled it and you would like them to treat this as your appeal and either confirm acceptance and PCN cancellation, or issue a POPLA code.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

I want to say thank you for all your help and advice. The likes of Coupon-mad, B789, Umkomaas, KeithP (and I'm sure plenty of others) - you all have written 1000s of posts offering help and advice to people; a lot of forum users will disappear as quickly as they appeared once they have received the information needed; however you all continue to offer your time to help everyone and without that, this forum would be worth a lot less.
The only way this cowboy industry is going to stop is if more people fight unfair tickets and follow the advice in this forum. Paying the fine can often seem the easy way out, but this only enables their predatory behaviour and gives them more ammunition to issue ridiculous parking tickets.
(By the way, we had a baby girl last week.)

So I did manage to locate their management offices on a recent visit. In case anyone has any issues in the future and you want to see them in person, it is quite hidden, but you'll find management in the same end where the toilets are located (next to Choice).
We managed to get a response from the manager after having contacted them on the website:
