    Too many windows, which are limiting the layout.  

    If you need a smaller slope on the roof, you could roof with zinc, and, either way, leave it open inside to allow roof windows.   Much better light from them.

    Is the small area behind the stairs the original kitchen?   Will it be a utility room?   If so, could the door to outside be in there?

    This is due to having a next door
    I live in a semi and my next door neighbour is entitled to privacy
    Hence windows need to be on the rear and left hand side of the extension
    I would put a window in the back wall, but not one that would extend over the worktops,  so you could have tall/deep cupboards/appliances at both  ends of the worktop,  and a couple of Velux  windows in the roof.     A higher  ceiling will make the room feel more spacious.      Leave out the ones in the other walls, and relocate that outside door if possible.

    I considered velux windows and thought them unnecessary but may rethink

    Because to make my house wheelchair accessible, we planned for the doorway to be enlarged and the door to go !

    Because to make my house wheelchair accessible, we planned for the doorway to be enlarged and the door to go !
    I hope not as we have never had a fire door in any of the three houses we have lived in.

    Having windows in the roof will give you very good light during the day, and a window overlooking the garden gives you a good outlook.    But the ones you showed in the side walls are seriously limiting your kitchen layout and are unnecessary if you have the Velux windows.

    Our daughter had a roof on an existing extension that leaked as it was too low a pitch for the tiles used.  The extension had French doors and 4 quite large windows so seemed quite bright, but when she had the roof done with zinc she had  a bank of 4 Velux windows fitted and the difference in the light levels is amazing.
