Latest EasyJet Flight Release

We wanted flights to Fuerteventura for Christmas and thought we had a bargain booking at 6.45 - but by the time I got to pay the price had increased by over £200 and the selected seats were gone so I had to rebook and guess what they had gone up again…ended up paying £755 for two seats admittedly with extra legroom and two cabin bags! So £300 increase in minutes!
Does anyone have any tips for future bookings at peak times? Should I have just booked the cheap tickets then added the seats on at a later date?
