Wanting to get out of contract, this method has likely been thought of before but worth asking

Some backstory: About 8 months ago I was able to negotiate my FTTC contract down to £26.99 with BT. Looking back it was likely stupid to do this and just keep out of contract but they wanted £34.99 each month outside of it. At the time no company would really beat £26.99 especially with the extra hassle/landline included with BT.
This month FTTP went live and BT will honor the 150Mbps package for £26.99 due to the "full fibre promise"... we all know that won't last due to price increase soon anyway.
What has got my itch going to move is that BT themselves are offering new customers the 500Mbps package for £30.99 and as you can probably guess I kind of want that. An extra £4 for like ~3.3x the speed is pretty decent value plus a doubling of upload speed is nice.
BT aren't having it. The online retentions team was ridiculous. They offered me £39.99 for the 500 package...
They then said I could likely get the 500 deal if I first of all signed up to the 150 deal and then he would check to see if the system could then upgrade me to 500 for 30.99 which he said was very likely... like what kind of logic is that? Sign up to a service you actually really don't want to maybe have a chance at getting the service you actually want...
It also appears like Vodafone is offering the 500 package and once you factor in the gift voucher and stuff it comes out to about £21 a month and apparently under £18 if you're already a vodafone customer.
So onto my actual plan... some may say fiendish but hey just offer me a semi decent deal close to a new customer and I wouldn't have to think of such tactics. The plan is to actually just "upgrade" to the 150 package and if I understand everything correctly this obviously triggers a new contract. A new contract should mean a 14 day cooling off period in which I will be able to cancel. Now it's not too smart that someone at BT likely thought about it but who knows.
If that somehow has no loophole such as in terms and conditions "if you cancel you will go back to your original contract and FTTC"... can't see how they could since digital voice would be installed etc but who knows. Any advice?

You would revert to the previous terms and digital voice does not need FTTP0

I do wonder something though. BT is moving most of its fibre options to EE in 1-2 months so that does mean upgrading would mean being transferred to technically a new company. I didn't sign a contract with EE, I signed with BT. I think then that might be grounds for early cancellation. I will contact them later when it gets announced.0

Also where are you seeing 500 for 30.99 with BT? I can't see it anywhere1 -
You say that but weirder things have happened in life. I'll update this thread if I ever get out of it in March/April when they fully announce the switchover to EE.
If they still be awkward I'll try Ofcom and plead the case of company change before I know I'm really penned in. I lose nothing really. It's always fun to have a moan now and again.
