Sim Card for Caribbean Cruise

We are lucky enough to be going on a cruise next month - I did have an International SIM card with credit on it which due to lack of travel in the last few years and being able to use my EE account in the States has now gone awol !!-
The provider still operates but due to moving to Esims can't supply me with a replacement Sim card
None of my phones support Esims so I was wondering if anyone has any ideas for what I can use - I can get a package from EE which will give me 60 mins talk for around £ 11 but data etc is silly money so was hoping there was an alternative or if anyone has bought a local Sim Card which will work on most of the southern islands with a decent amount of data

Be careful when roaming at sea as you may be subjected to maritime roaming rates which are very expensive. Here is what EE charges:This article by Ken may help you find what you need:

You will find free data at most ports so I would recommend that you use WhatsApp or similar for calls and messages.
Just follow the crew to find the WiFi locations.
Turn off data and avoid receiving any incoming calls.2
