There is full guidance in NEWBIE sticky for AOS.  If you are using @Johny86 defence coupled with the template defence due to sparse POC just make sure your paragraphs 2, 3, 4 etc make sense and refer to YOUR situation.

What is the Issue Date on the court claim.

Just hang fire doing your AoS until @KeithP comes along and confirms the dates for you.

Also later in the process you will be able to request which court the hearing is at and of course you will choose one close to home.

Yes, as @Boat_to_Bolivia says, most definitely do not file an Acknowledgment of Service just yet.

If you only received the Claim Form today, then there is no great rush.

Slow down, but do tell us the Issue Date on your County Court Claim Form.

I'll hang tight then, maybe I was a bit to eager to get it done given the formal papers that have come through...  

The issue date is 2nd May 2023 - they arrived in the post at 12:20 today.

At no point did I ever say, "I'm agree and willing to pay this", another thing that I hope will go in my favour, a complete and utter fallacy

It will have been included in the signage on site (the contract with the driver), and its acceptance will have been by conduct in parking there. 

Lack of knowledge of that agreement suggests the driver did not fully read the signs at the time. Dangerous, reminder for the future?  There is no mileage for you on this in your defence. It is actually already covered in the NEWBIES FAQ Announcement, second post.
