I would contact her and just be truthful, say you found the voucher and check it hasn't been used and ask her if she minds whether you go if she is nor going to be back before it expires.2

A lot of people are saying "Use it" but it isn't yours to use, you've given it to your friend as a present. If you'd given her chocolates for example, and she hadn't eaten them would you ask for them back so you could eat them? Talk to her!1

Googling on your question might have been both quicker and easier, if you're only after simple facts rather than opinions!3 -
Unless she's really off the grid, get in touch and ask her. She hasn't used it, so she could well be happy for you to use it, but you should replace it or offer an alternative. I suspect it wasn't her thing (it wouldn't be mine, as I don't drink gin) but she didn't want to say so: if that's the case she might be glad of an exchange.1

I would say communication is key here. As has been suggested, why not ask her if she minds you using it? Then you will get to know whether she has passed it on or forgotten about it. It could get awkward if you do something behind her back.0

I wouldn't just use it without saying anything. Ask her if it's okay for you to use it as it will expire before she's back and then get her something to replace it. What if you had bought them a box of chocolates and saw them unopened in her living room whilst you were house sitting while she was away, would you take them?
You bought her a present. Your financial commitment ended there. If they haven't used the 'gift', that is up to them.
Maybe a meal out would be the better gift in the future.

I find it weird you'd check if the voucher had been used, you could have just brought one for yourself.
