So where does one stand if one instructs a legal entity to defend the claim, paying a flat fee for instance, and then DCBL discontinue? Or is it the case that once a Counterclaim is entered the case must proceed to court?
Payment arrangements with a legal entity is something between you and them, so ask at the time before instructing.

If you are going to counterclaim you must do this quickly. A counterclaim keeps the claim live regardless what DCBL do. As ZZPS has confirmed the amount was paid, DCBL will be scuppered
And you never know, a judge may well award you extra unreasonable costs
