The point I thought I'd made is that, subsequent to wiping the work surface with a microfibre cloth soaked in soapy water, there's still a residue of dirt below the surface that needs bringing out with a magic sponge.0

But even so that has nothing to do with work surface or manufacture. I paid a bit extra for my worktops and they are self cleaning. It doesn't matter how much mess I make on them, all I have to do is leave it for as long as possible and the next time I go in the kitchen the tops are clean and sparkling. The cleaning medium does get a little expensive at Christmas and birthdays but boy is she worth it !5

It's not "below the surface", it just wasn't removed by the cloth in soapy water.
