@tooldle - simple meals are generally the best and tastiest! I love grains and beans cooked and served with veg, greens and fruit and simply dressed with vinegars and fresh herbs...always incredibly flavourful and so good for you plus you using different vinegars and herbs completely changes the flavours so it's never boring!! 🙌
Last night dh cooked and made berebere lentils and rice - a very simple dish and beyond cheap!! I was going to cook but he really fancied the lentils so was happy to make them!
Tonight we have family coming for dh's birthday and they are having a takeaway- I'll be making myself some tofu in lemon sauce and I'll use yesterday's leftover rice and fry it - I'm doing them a vegan fry-up tomorrow (fake bacon and sausage, tofu scramble, hash browns, baked beans, tomatoes) while I'll be sticking to my smoothie and oatmeal!

Made a lovely grain based 'flan' yesterday - followed a recipe in one of Dr Greger's books so a bit of a faff (I'm really not a recipe cook! 🤦♀️) but well worth the effort as it was incredibly tasty!
The base was a variety of cooked grains and a bit of white beans pureed with celery, onion, miso, nutritional yeast, tarragon etc baked for 10 mins then filled with mushrooms, onions, garlic, peppers, kale etc - the filling all held together with the remaining white bean puree. We had it with carrots and broccoli and there is plenty left over so we'll eat more of it tonight with sweet potatoes and cauliflower. There was quite a bit of filling, bean puree and grain left after I had made it so I mixed everything together to make a loaf and bunged it in the freezer for another time 😁 cook once, eat at least 3 times!! 🙌

We've been eating up leftovers of the curry I made on Thursday with a variety of salads and veg over the past couple of days - I felt pretty ropey yesterday though so just had a massive smoothie while dh cooked some 'greek kebab' style fake meat and had it in pitta bread with red cabbage and chilli sauce.
Today I'm making mixed grains with a mixed herb dressing, mixed mediterranean veg, dark speckled lentils and salad. We've finally got some decent weather now and I want to spend as much of the day in the garden as I can so it's a really simple (and incredibly tasty) meal to have! The grains, veg and lentils will all be cooked in the instant pot so the house will stay cool too! 🙌😁DNF: £708.92/£1000
