Stuffed peppers in our house last night. Nearing the end of my bag of brown rice now. Stuffing made from rice, mushrooms, onion, carrot, courgette, tomato puree and parsley. One large pepper left over along with a good size bowl of the 'stuffing'.
Not sure what to have today.2 -

So, tonight I made horseradish mash, portabello mushroom, smoked tofu and carrots and green beans in French mustard - it was very tasty and dh went back for seconds! 😂
Tomorrow I'll be having cauliflower in some guise along with any leftovers lurking in the fridge - I've got a few bits and pieces of fresh stuff that I need to use up over the weekend as I'm away next week and don't want to waste anything!DNF: £708.92/£1000

Used up lots of odds and ends from the fridge over the weekend so that we have nothing fresh left while we're away - tonight's dinner is made too, we're having curry and sweet potatoes
I'll go shopping on Friday once we're back to replenish the veg stocks (I'm so looking forward to the garden being productive!!) and I've made a list of stuff I will be making upon my return 😁DNF: £708.92/£1000

I watched a documentary on Netflix last week called Health Of The Nation as it was recommended to me by a friend - some of the things on there shocked me despite me thinking that I had a reasonable amount of knowledge about nutrition!
Since then I've been watching and reading a lot of Dr Michael Greger's stuff - I've got to say that the more I've learned (all of his stuff is evidence based from thousands of peer reviewed research papers, plus he gives all profits from his books/website/speaking engagements etc to charity so no financial gain for him) the more pleased I am that I'm vegan!!! 😳
I went vegan originally for ethical reasons but looking at all the evidence I'm really glad from a heath perspective that I did and from now on will definitely be tweaking my diet to make sure that I optimise the healthy aspects veganism by eating more of a wholefood plant based diet!
I tried looking for the Netflix programme but cannot find it-it sounded like it could be interesting. Do you know when it will be shown again?

Used my new chickpea flour to make a pancake for breakfast this morning along with chia, poppy and cumin seeds, annotated with chopped, scrag end of last year’s shallots and grated smoked tofu, served with samphire (an unusual treat 😊), pickled red cabbage and brown sauce. Lush ❤️

@leftatthetrafficlights - I riff on the basic recipe quite a bit depending on what needs using up / or just what I fancy 😊 It’s an old stalwart of a recipe - think in a e been using it for about 6 years now.

Mixed mixed bean salad last night with toms and pots to accompany. I used only one tin of mixed beans and fresh green beans (with red onion, fresh coriander , balsamic and olive oil to dress), and still there are enough leftovers for lunches today.1

I'm back from a few days away and am really looking forward to getting back on the wholefood wagon!
I had a fabulous fennel and vegan feta risotto at one restaurant - they grated lemon rind on it and it was remarkable how much it lifted the flavours, its definitely something I'll be doing in the future!
I didn't eat too badly while away but I really missed my morning smoothies and cooking my own stuff even though I love eating out! 😂 I make no sense!! 🤦♀️
Anyway, I don't have a lot in fresh veg wise so whatever I make today will be with the frozen stuff I bought recently- there's enough spinach in the garden for my smoothie though so that's a major bonus and enough salad leaves and microgreens for a decent lunchtime salad 😁
I bought a new vinegar while I was away - it's made with black garlic and its beautiful! I'm really looking forward to using it today 😋DNF: £708.92/£1000
