    Nothing wrong with salad from a mixing bowl!! 😉 pretty sure that it's a rite of passage for most vegans!! 😂

    Help veganites! 

    I'm trying to sort some appropriate tea/cake/snack food for a small get together where 2 people are vegan.  I know I could do crudites and humous, bread and olive oil and possibly might think of more along that line but what I don't have is a nice cake type thing.  My go to for friends is banana based cake but contains milk, eggs and butter.  Any suggestions????  Something fairly straight forward for someone who normally only uses a bowl and a fork for mixing cakes although I do have a stick blender with whisks if necessary (which normally sends stuff all over the kitchen.....)

    Chickpea fritters for us tonight, served with salad and tortillas. Plenty of leftovers for tomorrows lunches and for the freezer. Really simple to make, used a recipe from my Greek cookbook.

    Hi @Brie 😊 I have a (vegan) banana and chocolate chip cake recipe I make reasonably regularly. Do you want me to dig it out?

    Or, I recently made oat, crystallised ginger and pine nut cookies if you would be interested in those for the ‘crunch’ texture?

    the cake recipe would be grand!!!  I like to have something to slice and have unearthed some nice cookie recipes.  

    Of course if you want to make the cake (being the expert) and deliver it that would be extra grand!!!

    But another question - I was looking at dark chocolate in Lidl, checking the ingredients and some was marked vegan and other vegetarian.  But the ingredients looked pretty much the same.  Is it that the vegan ones are made where there are no animal based products at all and the veggie ones might be prepped in a factory with milk chocolate (or something) nearby?

    There can be a number of reasons why they are labelled differently - veggie dark chocolate may have lactic acid from milk in it, may be have emulsifiers that are milk based etc. Vegan choccie will be free from any of that. Sometimes chocolate which is suitable for vegans will still be labelled as veggie as some manufacturers prefer it due to the possibility of cross contamination and the potential lawsuits from people with allergies. Labels by law have to clearly state potential allergens in the product so should state if there is milk in it but sometimes milk derivatives are used only as carriers for flavourings so its not always clear cut.
     
    If the vegan choccie has been made in a place that also makes choccie with milk it will have the 'may contain' bit underneath the ingredient list. 

    If you're buying for vegans you're always better to go for the item specifically marked as vegan 😉

  • Spicy kidney beans in lentil pancakes last night - had to have quite a few dollops of soya yoghurt to go with it as I'd gone a bit mad on the spices!! 😳😂 

    I have finally managed to get the big freezer emptied and defrosted so I'm going shopping today to get it filled back up - I am looking forward to having an organised freezer again!! It will be another couple of months before the garden produce is going to need freezer space so hopefully I can time everything properly and have a couple of drawers free again by then! 

    Planning on doing something with smoked tofu, kale and sweet potatoes tonight but I'm not sure what yet 🤔
