Can I take a metal spork in my hand luggage or will it be confiscated at security?

The UK shouldn't have any problems with it as per the above... you are even allowed knives up to 6cm and the tines on a spork is going to be much shorter than that plus you take needles without restrictions. There is a reasonable amount of discretion though.
you'd need to check the countries you are going to and their restrictions... the US is more restrictive for example.1 -
