Christmas veg ideas for the freezer

    I got some cheap swede, carrots and parsnips ( and spuds) from Lidl on Monday. The spuds are now in a paper sack in the garage and will see us through the next couple of months. The carrots, swede, and parsnips were peeled and cut up. The first two casseroled and the parsnips roasted using economy 7 electricity on Monday night and are now in the freezer ready to be used in roast dinners until the next cheap veg event at Easter!

    I would check the spuds regularly, the ones I was getting from lidl always had black spots and rotten bits underneath the skin and I end up throwing more than I keep because they can't be peeled out, hence never buying potatoes from them again.

    Had a lovely parsnip and apple soup at a Christmas meal last week so have bought a packet of the 15p parsnips- just need to get apples.
    I also bought a 15p red cabbage which I will use for coleslaw. Any that is left will go in the slow cooker with apples and onions

    Yes to freezing potatoes dauphinoise,also par boiling and coating in goose fat or dripping and freezing.  I freeze most things ,just think of the stuff you buy frozen or with freezable on the label. Leek and potato soup is great frozen.
    Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.

    Yes, you can freeze leek & potato soup.  Most soups freeze well - even if they split a little they'll be fine once re-heated and stirred.  I don't bother to par boil carrots before freezing, just chop/bag up/freeze.   Likewise with onions and peppers.

    I usually cook the potatoes (a bit more than parboiled) as I find they're easier to slice and guaranteed to be cooked properly. They can be a bit dry when they come out of the freezer but drizzling a bit of a last milk over the top sorts it out.

    Carrots frozen whole make good dog treats too- originally frozen for over summer, but our pup loves them whatever the weather.

    We have been having veggie soups for tea a lot recently and we always make extra- that way you get a variety rather than a glut of one type. 

    We've also been bunging veg in everything- chilli, spaghetti bol, pesto- it all gets extra veg. Grate carrots etc if visible chunks bother you/other family members (but isn't an issue for us). And again, we always make a bit extra. Easy for us as we're a family of 3 and most recipes feed 4, but we do try to pad things out with veg enough to eke 6 portions out of a 4 portion recipe.
