Jet 2 - flight delay query

Hello helpful people.
I travelled from the UK to Turkey for a summer holiday back in August with my wife and son. It was a package holiday with Jet 2.
On the way out, our flight was delayed by around 5 hours as the original aircraft had a fault which necessitated them sourcing a new plane for the journey. The late arrival in Turkey meant we reached the hotel at around 5am rather than midnight and thus the first day of the holiday was a bit of a write off as we had little sleep.
Then on the way back, our flight was delayed by almost an entire day as there was a medical issue on the flight on its way to Turkey which necessitated an emergency landing in Greece. This significant delay meant they put us up in a new hotel for a few hours - but there was a lot of waiting at the airport so we couldn't check in until around 5am and then had to check out again at midday, before leaving for the airport again at 7pm.
Is anyone able to help with the following queries please
1 - can we claim compensation for the 5 hour delay on the way out, i.e. the fault with the aircraft would be Jet 2's responsibility and wouldn't count as exceptional. My understanding is we would be due £1,050 relating to 3 people claiming £350 each.
2 - can we claim for reasonable refreshments purchased at the airport while we were waiting?
3 - would the delay on the way home being due to a medical emergency mean we aren't able to claim for this?
4 - the late arrival on the way home meant we missed our train home from Birmingham International to Euston and had to get a taxi instead [we landed after the last train had left and would have had to wait around 6 hours for the next one, not to mention our advance tickets were only valid for the original train]. The taxi was around 300 quid - is this something we should look to reclaim from Jet 2 or from our travel insurance [there might be an excess to pay for the latter]?
