Supermarket Online shopping - is this a thing?

Wife is adamant that when online shopping if you place an order say tonight, with delivery for 2 days time, should any items currently on offer end, then you are charged the full price on the day - is that right?
I would have thought what you pay at the time of the order is all you have to pay.

I believe your wife is right.1

Yep, all the supermarkets I've used have your total shown as something like a 'guide price' - not only special offers, the normal prices can change on the day too. All of them provide you with a receipt (lots do email receipts before it's even arrived) and there's the opportunity to hand anything you don't want back to the driver.
They can't charge you when you order if you buy anything loose that's charged by weight - if they did, I'm sure they'd overestimate the cost by a fair whack, as they certainly wouldn't want to miss out. Like those small supermarkets who charge 25p per banana.
Edited to add: I use Tesco at the moment, they have the days offers end listed on each item. I'm sure other supermarkets do similar.3 -
Also works the other way round so if something is cheaper on delivery day then when you ordered it you will get the lower price. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.1 -
It does vary a bit. Most retailers are as described above. But Ocado, and I believe Morrisons as they use the same website technology, will honour the price in your basket. This is a well-known "hack" - you go in and add items on offer, then wait until the offers change, and add new ones as well. Effectively doubles the number of special offers you have access to.3

I think the sites that "drop" offers generally state a "valid to date" for the offers so you should be able to tell if an offer is still going to be valid when it is delivered - with Ocado generally if an item is on offer when you order that's the price you pay, same goes for any price changes (up or down) it's the price when ordered that counts.2

In my experience with Morrisons, they do honour the price quoted in a special offer, even if the delivery takes place a couple of weeks after you placed that order. I can't speak for any of the other online stores.2

Prices for "Regulars" apply the same to any purchaseIf the offer on a Regular expires while it’s in your trolley, we’ll still honour the offer when you check out.• If a Regular is not on offer when it’s added on a Monday, but becomes on offer while it’s in your trolley, you’ll need to change the quantity of the item to activate the new offer. Or, if you don’t want more than one, simply remove the Regular from your trolley and add it again to activate the new offer.3 -
A quick glance at Tesco and they clearly state conditions that apply
Offer valid for delivery from 20/09/2022 until 10/10/20222 -
Asda charge you the same price it was when you put your order in. If you amend it after a price increase you pay the increased price. If on the rare occasion a price goes down you pay the reduced price on the delivery day2
