There surely must be cases where a will either can't be located or can't be retrieved until after the funeral has taken place, and so the deceased wishes as specified in the will can't be determined in time.

Yes, I was about to point out it's never a good idea to rely on such wishes being hidden away with the Will, as often funeral plans start to be made before anybody gets around to thinking about probate etc. Better to make sure that family/friends are actually aware of what's wanted.

As already mentioned though, I'm not sure I see the point of writing it down in this case, if the son is already aware and seems to be the only person likely to have an interest?

ISTM that funerals are for the benefit of the living wanting closure rather than the dead who will not be in a position to care.  As others have said an expression of wishes in a will has no legal status.  So I will leave my relations to celebrate, or otherwise, my life in any way they see fit.
