Nationwide do too - well, I have one.
When was it issued? My fiancée has a non-contactless Halifax card too but it expires this year and I anticipate the replacement will be contactless. Probably the same for a number of banks.

Can you change your card's contactless limit?

We can't change your card's contactless limit. But we can turn the contactless feature off. And if you'd like, we can send you a non-contactless card.

Actually ignore what I said. Santander are advertising that the basic account comes with a non-contactless card still.

I have a chip-and-pin debit card as I want that additional security in case of a loss or theft.

Now Co-op has sent me a contactless card with no option of chip-and-pin only.

Are all the banks going this way or might another bank suit me better?

Unfortunately CO-OP is not on the list

I think if you lose the card chip and pin won't prevent it being used online

I believe most banks are going in this direction, and every single card I've received has been contactless. Most banks allow you to set a contactless limit in the app (set it to £0 to turn off contactless) although I've never had a Cooperative Bank account so I'm not sure if they have the ability. If not, give them a call and request it to be reduced. If they can't do it, there's plenty of other switching offers out there such as NatWest which provides this ability.
Setting it zero does not turn off contactless. The functionality is still there in the card and the card can still be used, although in theory it will prompt for a PIN every time it's used (after it has received the £0 limit, anyway).

The only bank issuing actually non-contactless cards now is HSBC (+ First Direct and M&S Bank).

Edit: Santander also advertise that their Basic account comes with one.
First Direct  Chip and SIGNATURE instead of chip and pin

Chip and signature is something entirely different and is usually only issued to those with mental, mobility or dexterity impairments. Every bank is obliged to have some provision for this as a result of the DDA and subsequently Equality Act.

Chip and sign cards can be contactless too.
