Flight delay with Easyjet

Hi All,
Last Saturday (20th) my flight to Paphos from Manchester was delayed by 3 hrs and 52 minutes. 
On the Easyjet updates it said it was due to Air Traffic Control restrictions. 
But we were processed into the departure lounge; we then received a tannoy saying there were not enough cabin staff and that was causing the delay which lead to us missing our allocated air traffic control slot. 
Once we got onto the plane the pilot blamed weather over the Balkans.
This only appeared to affect Easyjet as TUI and Jet 2 still flew at the same time. It was noted by one of our fellow passengers that alot of Easyjet flights were delayed.
My initial interpretation was that this was a operational staff shortage which was not our problem.
On a Facebook group they suggested using a recent EASA publication but it appears that the UK no longer subject to these since leaving the EU.
Can we legally ask Easyjet to provide proof of why the delay happened?
Has anyone experienced this before?

You can ask for anything you like, but I don't believe they're under any legal obligation to prove anything at this stage.

To start with, you can submit a claim for compensation and see how they respond to it - if they decline it then you can escalate to their ADR provider for an assessment, and then ultimately to small claims court.  As I understand it, it's only once it gets to that point that they're actually obliged to share documentary evidence.

It's entirely possible that there were multiple reasons for the delay, so it could be that some, but not all of it, was within EasyJet's control?
