Appealing an EasyJet decision

Can anyone advise how to appeal easyJet’s refusal to pay out. They say it was due to air traffic issues so not their fault but their live updates said it was due to them changing the aircraft. 

There is nothing in their email advising how to appeal this

Could be both reasons.

To minimise the ATC delay (or indeed any delay) airlines will often swap around aircraft at short notice.

I’ve also found some helpful template letters on the MSE website with references to two pieces of legislation. One linked to EU law the other UK. Any suggestions as to which is the more appropriate?

The regulations originated in the EU but were then adopted into UK law when we left the EU, so to all intents and purposes they're identical, except for the fact that the UK one pays slightly higher compensation because of exchange rate fluctuations since Brexit.  You may not have a choice anyway, depending on where the flight concerned was to and from?
