Today we received Before Claim Court, can I just please check if I ignore it or submit SAR and written response?

Send the SAR now.

If you want to get this over with sooner rather than later, tell them to bring it on asap.
Alternatively, if you want more time, send a holding instruction that whilst you deny the debt you are seeking debt advice and require the case to be put on hold for 30 days in accordance with court pre-action protocol. 
I suggest the latter as it will give you time to receive the results of your SAR. I also suggest that if you choose to send the 30 day hold instruction, then you do so around day 25 from the issue date of the LBC.

I tried to send them SAR to email stated in their Privacy Notice - got automated respose about "no user found". Same with email quoted on their letter and 'info' one on their web. That's dodgy.

Do I send a letter?

What email address are you sending to?

That email address is stated five times in their Privacy Policy.

Perhaps you could use their 'contact us' webpage to ask them for the email address of their data protection officer and tell them the email address in their privacy policy doesn't work.

No, that is still not the full title of any letter.
