Facts:
1. Easyjet (EJ) cancelled our flight from Munich to LGW within 4 hours of planned departure (2 adults).
2. EJ advised that the earliest next EJ flight would be 4 days later.
3. We booked an overnight hotel close to Munich to gather our thoughts (at our cost).
4. Whilst at the hotel we managed to book an expensive flight with Lufthansa to LHR the next morning.
5. We incurred quite a lot of costs because of all of this.
6. We filled out the online claim form with EJ and all we got back was the original cost of the EJ Flight from Munich to LGW.
Please can you tell me which of the following we are entitled to:
a. The cost of the Lufthansa flight
b. The cost of the taxi from Munich airport to the nearby hotel.
c. The cost of the overnight hotel in Munich
d. The cost of a takeaway we ordered for delivery to the hotel (the hotel restaurant was closed).
e. The cost of a taxi from LHR to home (there were no trains (they were on strike)).
f. £220 each compensation for the delayed flights (less than 1500km and more than 3 hours delayed).
Any advice would be much appreciated.

Having received the cost of the original flight, you'd now be due the difference between that and the replacement one, i.e. you're not entitled to full refunds of both.
b. The cost of the taxi from Munich airport to the nearby hotel.
Yes.
c. The cost of the overnight hotel in Munich
Yes.
d. The cost of a takeaway we ordered for delivery to the hotel (the hotel restaurant was closed).
Yes.
e. The cost of a taxi from LHR to home (there were no trains (they were on strike)).
Strictly no, although EasyJet would have been required to reimburse you for a journey from LHR back to LGW.
f. £220 each compensation for the delayed flights (less than 1500km and more than 3 hours delayed).
Depends on the reason for the cancellation, i.e. the extent to which it was within the airline's control.
Any advice would be much appreciated.

@eskbanker has accurately outlined everything that you are entitled to claim from Easyjet under the U.K./EU 261 regulations
I suggest that you make it very clear in your correspondence with EasyJet that when the flight was cancelled you did not choose a refund - and you did not accept their offer of a flight which was 4 days later instead you chose re-routing at the earliest opportunity which you had to arrange yourself and are entitled to claim back from the airline under the UK261 regulations.0
