Parkingeye fine appeal

Evening
Parked in a retail park. Apparently the parking time limit was 3 hours. According to Parkingeye, we were there 3.5 hours.
Do I use the template here? https://forums.moneysavingexpert.com/discussion/4816822/newbies-private-parking-ticket-old-or-new-read-these-faqs-first-thankyou "TEMPLATE ''ONE SIZE FITS ALL''
Additional points:
-We went middle of the day on a Friday - there were LOADS of empty spaces when we arrived and when we left, it wasn't busy at all
-We went to three different shops and spent money in all of them - almost £200 total
Do these shops not want the business..! Should I try to contact the landowner/shops about this ticket?
If I add the additional points above to the appeal, then the template doesn't really make sense, as it says there will be no admission to who is driving. Should I still use that template, or modify it, or add the extra information later (seems silly to later admit I was driving/a customer) ?

That is PLAN A (before any appeal). Obviously WITHOUT saying who was driving...!But it does make sense.

All you need to modify/remove from the template appeal is the pay & display sentence, if this wasn't a pay & display site. And of course you attach proof of the 'occupants of the car' spending £200.
As the NEWBIES thread already tells you (it says to attach evidence such as receipts or bank statements to the template).
None of the above involves saying who parked!PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
