Easyjet Car Rental - smaller vehicle than paid for

As we were booking our flight with Easyjet, we also booked the rental car at the same time last year thinking if there was a flight issue due to changes with Covid it would be a one stop cancellation. Our rental booking was for a 'VW Sharan or similar' vehicle as we'd have 6 adults and luggage to transport. The company supplying the rental was Europcar.
When we arrived after almost 6 hrs of flight delay, we were offered a vehicle with a 2.5 seating arrangement that would not fit 3 people across the row. When I complained, Europcar replaced that with a VW Touran as the best they would offer. We had some cramped journeys when travelling with 6 and luggage. I contacted Easyjet Rentals during our holiday and was told we'd be sent instructions (by email) on how to make a claim when we were home. The email did not arrive, but I have the chat transcript.
Searching today, it is worth noting that the Easyjet car rental site has a VW Touran listed as a 7 seater vehicle and also a VW Sharan listed as a 7 seater. The Sharan is 20% more expensive than the Touran. As one might expect, Easyjet are refusing to pay any compensation for the smaller sized vehicle when we clearly paid for a larger one.
Any advice on tactics would be appreciated as they clearly hope I'll give up and go away.

What group was the car you hired in and what group was the car you got in because as far as I know all rental companies use something like Hertz will call Full_size Polestar 2 or similar Group G1
Forget about how many seats the car has just look at the prices of different groups0
