    So, I can’t see any way of adjusting the height. There is definitely space at the top as I can lift the door up. But I can’t see an obvious place where you’d adjust it. 

    This all seems to just be the locking part. There’s no other bits to it that I can see.

    Is the issue with floor height that the one on the right would interfere with the sliding door if raised? If so, fit the thicker flooring up to the door, and a lower strip - same height as the threshold - to fill the gap immediately under the door, to match the threshold - effectively make the threshold wider.
    Yes, there would be a small step on to the slightly higher floor, but no worse than the existing step height of the threshold - just one more 'step'!

    If the door has rollers underneath it that run in that slot, then there is usually also a height-adjusting screw adjacent to it - have a look under the door, ID where the wheels are (assuming it has them), and then look for adjusting screws for them.
    Or, if the door is somehow hanging off the top rail - tho' surely too heavy for this - then that's where adjustment would be.
