TUI have confirmed compensation will be payable in this case.
I was going to suggest perhaps it was the cabin crew who were out of hours, given that the Sunwing aircraft departed Corfu so flight deck must have been legal to operate - @CKhalvashi found the answer!
OP states they have been offered fixed compensation which sounds like TUI are meeting UK/EC261 obligations on compensation? I'm not sure what additional compensation they want? Sympathise that the pax treatment could have been better but when that situation happens at midnight in Corfu it's never going to be easy. Finding hotel accommodation wouldn't be easy and I bet not many retailers were available at that time for people to purchase food.
As an aside I do love the Mirror/Reach Group news website endlessly churning the same stories over and over - unless perhaps the people of Nottinghamshire do take a special interest in flight operations to and from Aberdeen?!
We were 3 hours delayed returning from Mallorca a couple of months ago - the crew were to pick up the aircraft from Manchester, fly to Glasgow and take the outward leg passengers to Palma.
There were no airside ground handling staff at MAN to move the plane, therefore it was three hours late leaving for GLA.
Fortunately the crew must have still been within their stautory working hours to fly us back.
That possible scenario doesn't excuse the lack of care and attention etc. in Corfu.

I'm not also sure who provides the cabin crew on these flights operated by Sunwing. If it's TUI, you may have 2 sets of crew operating to different FTLs which for the OP would complicate the matter further (as very likely has been seen here).
FWIW, OH works for an airline and operates to different procedures when flying the EU-reg planes compared to the G- reg ones.
