Can anyone help?
I'm in the process of claiming compensation through Tui as we had a package holiday booked with them for 6th June and they cancelled it on the 4th June. They offered us no alternative whatsoever but just gave us a refund. They gave me information how to claim but all the tables for claims show delay times rather than a full cancellation with no alternative options.
How long should I also leave it before escalating to higher authority?

Not sure which tables you're looking at, but https://www.moneysavingexpert.com/travel/flight-delays/#cancelrules explains the flight cancellation compensation principles and figures.1

You will claim as a cancellation, which has the same rates as a delay of 3+ hours. This may be for one or both legs, but each cancelled flight is treated separately.💙💛 💔1

It depends why they cancelled your holiday. If it was because the flight was cancelled then you should be entitled to the EC/UK261 compensation as detailed above.
If they cancelled your holiday due to some other non-flight related reason then you may be able to claim £100pp as per TUI T&C's https://www.tui.co.uk/destinations/booking/tandc?ptype=PDP1
